Do you have a hankering for something sweet and comforting, but still want to stick to your diet? Yeah, me too. These muffins are healthy and pack enough protein for an on-the-go breakfast (which is basically the only kind of breakfast I eat nowadays). They're sugar-free, dairy-free, and grain-free, but more importantly, they're really easy to make. In fact, chances are, you already have the ingredients in your kitchen—and they only take about fifteen minutes to make. I'm sold!
- 2 bananas
- 2 eggs
- 1 cup peanut butter (I like crunchy, but you do you)
- 1.5 tsp baking powder
- 1/2 tsp salt
- 1 tsp honey (optional)
- For a chocolate version, add 1.5 tsp of cocoa powder
Throw everything in a blender. Spoon batter into muffin tins (filling them about halfway). Top with chocolate chips, or walnuts, or nothing. Bake at 350 for about 10 minutes, or until golden brown on top. Let cool. Eat!
